What is tofu?

Tofu, a popular product for centuries in the East, is a yellow soybean meat substitute that is made from coagulated soy milk with natural mineral rich coagulants (nigari) based on calcium and magnesium.

One of the best features of tofu is its versatility. It is a culinary chameleon which can absorb all the flavours you want. Tofu is a soft creamy meat substitute, which is very suitable for crushing, mixing, granulating and for preparing sauces and dressings. If a more rigid structure is required for baking or stir-frying, tofu can be prepared as follows: boil it in water for 5 minutes with sea salt and soy sauce, or sprinkle with soy sauce and bake in the oven at 150°C for 15 minutes, or coat it with starch and deep fry for 1 minute (or longer) in vegetable oil at 160°C.
